Nose:
The aroma is crisp and inviting, immediately revealing a classic gin character with the pronounced resinous aroma of hand-picked wild juniper. Bright, invigorating notes of lemon zest bring a tangy freshness, perfectly complemented by the subtle sweetness of orange zest. A hint of coriander spice rounds out this aromatic profile, while a delicate, distinct touch of pepper heralds a unique tasting experience.
On the palate:
The attack is remarkably crisp and fresh, dominated by an explosion of lemon zest that stimulates the senses. The powerful, resinous essence of wild juniper forms the heart of the gin, providing its classic foundation. As the gin settles on the tongue, the star emerges: black pepper. It does not impose itself with aggressive heat, but unfolds gracefully, creating a velvety veil that envelops the tongue, delivering sophisticated, lingering warmth and a refined spicy depth. How to serve a Mallings No. 1
Ingredients:
Double shot (50 ml) of Mallings No. 1 Gin
Tonic
Plenty of ice cubes (large cubes are recommended)
Large gin glass (Copa/Balloon, 60 cl recommended)
Instructions:
Fill a large gin glass halfway with ice cubes. Don’t hold back—the more ice, the better the chill and the easier it is to control how much the drink dilutes.
Pour 50 ml (a double) of Mallings No. 1 Gin over ice.
Slowly top it off with tonic water, just enough to cover the ice cubes—this helps maintain the balance and freshness of the flavors.
Garnish if you like (Mallings No. 1 pairs perfectly with a slice of lemon or a sprig of thyme), but it’s just as delicious on its own.
Serve immediately. Savour it slowly and relax!

Our spirits are born in the heart of Ariège, at La Distillerie du Sud—a small-batch artisanal distillery located on a historic estate near Carla-de-Roquefort. In 2018, a former cowshed on this old apple orchard was carefully transformed into a vibrant hub for award-winning artisanal spirits, thanks to the passion and vision of its founder, Stephen Malling.
