Nestled in the heart of the majestic foothills of the Pyrenees, our artisanal distillery welcomes you to Carla-de-Roquefort, in Ariège. It is here, at the Domaine de la Ville, that tradition, terroir, and innovation come together to create exceptional spirits.
Originally from Scotland, Stephen Malling settled in Ariège in 2018, driven by a deep desire to create a spirit rooted in the local landscape yet informed by international expertise. His love of gin, his British roots, and his respect for French traditions have found the perfect setting in this wild and unspoiled region.

The Estate: From Ruin to Renaissance
Before becoming home to our distillery, the Domaine de la Ville was a vast, abandoned farm complex consisting of barns, stables, and historic buildings. Stephen, with the help of his family and colleagues, undertook a massive renovation project to transform these forgotten walls into a vibrant, functional, and welcoming space, all while preserving their spirit.
The Art of Distillation
At the heart of our production process is a state-of-the-art Dutch still, custom-installed in our renovated facilities. Every step of the production process—from macerating the botanicals to slow distillation—is carried out on-site with meticulous care. This artisanal precision is the key to the consistent quality of our gins and vodkas.
Quality Recognized Internationally
In 2025, our gins and vodkas won eight awards at prestigious international competitions in London and Paris. These awards highlight the dedication, creativity, and high standards we bring to every stage of production.

Our Gins: Small Batches, Big Personalities
Each gin is produced in small batches, following a unique recipe. Whether it’s our spicier Classic Dry Gin or a sweeter, floral version, each bottle offers a distinct experience that truly comes into its own when enjoyed with a good tonic and ice.
