Our spirit was born in the heart of Ariège, at La Distillerie du Sud—a small-batch artisanal distillery located on a historic estate near Carla-de-Roquefort. In 2018, a former cowshed on this old apple orchard was carefully transformed into a vibrant hub for award-winning artisanal spirits, thanks to the passion and vision of its founder, Stephen Malling. Since then, Stephen and his team have been distilling with precision, perseverance, and heart—earning international recognition while remaining rooted in their local community. Every bottle reflects the craftsmanship and spirit of the Ariège.
